Description

This filtered anchovy sauce is a transparent amber coloured liquid which encapsulates all the flavour of salted anchovies in one little bottle. It is produced using traditional methods. The anchovies heads are nipped off and then they are cleaned by hand and layered into a barrel alternating fish and salt, then a wooden disk is placed on top and on top of that are laid weights. Due to the pressure a liquid begins to emerge ( the liquid of the first 48 hrs is disregarded). When the process is terminated the liquid is subjected to a temperature of 18-20° C so that the water evaporates further concentrating the liquid. At the end of the maturation process of the anchovies (4-5 months) the liquid is again poured over the anchovies still in the barrel and slowly allowed to filter through the various layers where is draws out the organoleptic characteristics. It flows out of the barrel through a hole in the bottom and is then filtered and bottled. The result is this amber coloured liquid with its composed and decisive flavour. It is used to dress pasta and as an added ingredient to other dishes.
