Fruit of the olive tree and typically Mediterranean  these black olives are obtained  by allowing the fruits on the trees to fully mature ; after harvesting they need to be treated ; so are  soaked for several days in cold water which is constantly changed to allow them to release their bitterness before being potted . They are full of unsaturated fats, good for keeping our cholesterol down, and an antioxidant full of vitamin E. No Sicilian is ever without Olives in their kitchen!
