Description
Organic Extra Virgin Olive Oil is produced from Santagatese, Leccino, and Biancolilla Carolea olives, at an altitude of 350-400m. The olives are harvested from mid-October to mid-December. The harvesting is done by hand with the aid of vibrating combs and shakers of the trunk, in strict respect for the periods of maturation. The olives are pressed on the same day of collection in the company mill in a continuous cold cycle.
The oil consistency varies from veiled appearance in the first months after grinding to clear olive green later. The color is golden with greenish reflections. It has a fruity flavor with hints of herb, its main sweet flavor has a little of bitter and spicy note, especially in the first months after the milling, tending to almond later on.
This raw olive oil is great on vegetables, meat and fish.
